Chicken Peanut Curry or Addicted to Peanut Butter

I love peanut butter. I like it on sandwiches with or without jam, in cookies and in savoury dishes like satay and this Chicken Peanut Curry. The funny thing is that I remember the first time I tried it I didn't like it at all. You see, in Germany, it isn't as popular as in America and many people probably won't have heard of a PB&J Sandwich. So when I bought a jar some time in my teens I didn't enjoy it. I didn't mind the taste but hated the way it made your tongue stick to the roof of your mouth. Well, I have definitely been converted since.

The best peanut butter I have ever had is the freshly ground honey roast peanut butter from Whole Foods Market in America. I always by some when I'm there and bring it back, but as I don't get to go to the States regularly, I usually have a large jar of organic Suma Unsalted Chunky Peanut Butter in my cupboard, which is just that, chunky ground peanuts without any other additives.

I find peanut butter and peanuts quite addictive and can never just eat a handful or just one sandwich, which is bad and I have as a result been known to continue eating until I feel slightly unwell, which is not good and I'm ashamed to admit. What's the thing you can't stop eating?

Chicken Peanut Curry (serves 2)

1 large chicken breast fillet, diced
1/2 onion, chopped
1/2 red pepper, chopped
1 clove of garlic, minced
1 tbsp red curry paste, heaped (this time I used Korma paste)
2 tbsp chunky or smooth peanut butter
3/4 can of coconut milk
1 tsp ginger syrup (optional)
1 tbsp soy sauce or nam pla
salt, to taste
pepper, to taste

Heat a little vegetable oil in a frying pan and fry the onion and chicken until the chicken is sealed on the outside.

Add the pepper and the garlic and fry for another minute or so.

Add the rest of the ingredients and stir until everything is well combined.

Bring to a simmer and cook until your chicken is cooked through.

Serve with Jasmin rice.

This sounds really good! I don't have a specific thing I can't stop eating... there are many. Risotto, pastas, french fries, soft cheeses.

I've only peanut butter once and I can't remember what I thought of it, how odd. I'm going to have to rectify that soon.

My biggest weakness is bread. Any kind of bread, with any kind of topping. I can't get enough of it.

Chocolate comes a close second though, I can't have it in the house because once it's open I just keep going.

hey, you are talking about one of my favourite current addictions! :D like you, i tried it many years ago, and didn't like it. Until I bought some to make Nigerian Kindey Bean and Peanut Stew (http://maninas.wordpress.com/2007/11/15/nigerian-red-kidney-bean-stew-with-a-peanut-sauce/), and that was it! I was prompty addicted to BOTH! :D Do try it, it really is incredibly good, and incredibly simple!

I challenge you to try it! :D

Sylvie - like you I didn't like peanut butter when I first tried it, but I grew to like it.

I love the sound of of this curry.

By any chance can you remember the name of the peanut flavour wotsit kind of crisps avaliable in Germany. I was trying to describe them to Hubby earlier, but he doesn't believe me!

I can't have peanut butter in the house any more - I literally eat it from the jar with the spoon! I just can't get enough of the delicious stuff...
This is one recipe I shall have to try. Heaven!

Ginger, I guess bread is my other big addiction, in all shapes and forms. I eat far too much of it and am trying to cut down a little.

Sylvie, I have never gotten around PB&J sarnies, although my American DH loves them....Yuk!
However, since discovering peanut butter in Asian foods this is acceptable to me. Loved your curry recipe and its in my 'must try' folder.

Oh yum, peanut curry is one of my favorite dishes! I, too, love peanut butter.

Berries are one of my weaknesses...it's just so *easy* to keep popping them into your mouth!

I didn't like peanut butter at first either. I love peanuts and satay and adding a bit of peanut butter to stir frys but peanut butter on toast and in sandwiches I can only eat once in a blue moon. The sound of this curry however - yum!
