I guess the picture says it all. It went wrong!
I overdid the second knead, and have since learned that it should be more of a gentle prod. The texture was good, but the second rise only happened sideways, there was no upwards movement. Oh, and the strange pattern on the top was a result of the cling film sticking because I didn't dust it with flour.
Once cut the slices looked like biscotti.
I'm not giving up so easily though and won't admit defeat just yet. Look out for Take 2!

Oje, das kenne ich nur zu gut! Deswegen landet Sauerteig-Brot bei mir meistens in einer Backform :-)
